Who can believe we are entering Memorial Day weekend? We don’t have any big “going anywhere” plans but that’s been motivating me more and more to get creative with ways to celebrate within my home and little neighborhood.
For me Memorial Day means hot dogs, hamburgers, potato salad, coleslaw, and baked beans. Really just the all American meal! My mom, fondly known as Mimi in our household, has the best potato salad at every family gathering. If you follow me on Instagram, you met Mimi last weekend when we went to her antique warehouse (@antiquewarehouseokc)! I asked her if she would let me share the recipe with you and she said yes!
You might already have a lot of the ingredients already. I made a quick list of everything we were missing, put in a grocery pickup order, and got to work. And because I like things spicy, I added a few ingredients to give it a kick! Check out Mimi’s recipe plus my special additions below!
It’s so easy and doesn’t take long at all! I actually filmed myself making Mimi’s potato salad and it only took 35 seconds! Well, that’s the timelapse, but really — it doesn’t take long at all!
