4 Great Fourth of July Recipes
Happy (almost) Fourth of July! I can’t believe we’re almost to July and nearly halfway through 2021. Time is flying, my friends! We’re looking forward to spending time with family and friends and getting a TON of use out of our new pool.
In honor of the upcoming holiday, I wanted to share four recipes from the archives. Are you looking for something to bake or cook for the summer holiday weekend? I’ve got you covered with four of my favorite recipes.
First, let’s be really clear about the things I look for in a great recipe!
My favorite recipes have to be easy. I often have kiddos helping in the kitchen, or I need to make something on the fly at the end of a busy day. I love cooking but lean on my tried and true recipes that are uncomplicated and easy to remember. I can get creative with easy recipes, adding in things here or substituting there, but they give my brain a break too. Time spent in the kitchen with an easy, delicious recipe is good for the soul.
My favorite recipes use up what you’ve got! As has already been determined, I love getting creative in the kitchen. We don’t have an ingredient? No problem, let’s find a substitute! We have bananas that are about to go bad or we over Instacarted on strawberries? Let’s use up what we have! Our household of 5 goes through a lot of groceries and we’re really mindful of stretching as best we can between grocery trips! It’s one of the reasons we created the Weekly Meal Planner Notepad. Mimi’s Potato Salad
My mom, fondly known as Mimi in our household, always brings the best potato salad to every family gathering. Last year, I made a spicy variation and have been thinking I need to bring it back for our next get-together. This recipe is quick and easy and can be adjusted to your (or your guests!) liking.
Pico de Gallo
This is my never-fail pico de gallo recipe! It’s best made the day before so you can really let the flavors marinate — perfect when you’re hosting! Plus, Pico de Gallo is so multi-functional. It’s a great base for guacamole, perfect to top grilled fish with or just dip your chips (or cucumbers) right in!
The Best Ever Muffins
If you’ve followed me for any amount of time on Instagram, you know I make muffins A LOT. They’re a family favorite. The kids love them and it’s a great way to use up ingredients. These are the best and easiest muffins to make with simple and flexible ingredients. You might have everything you need at home to make them right now.
Homemade Popsicles
The cure for a hot summer day is an easy homemade popsicle. This is a great activity for the kids to help with too! You can easily make a batch of homemade popsicles, then store them in the freezer for a quick treat throughout the week. And because we used pretty good ingredients, I don’t feel guilty about giving them to the kids or indulging myself! Don’t hesitate to try out flavors you love, use leftover juices or fruit you have in the fridge, and experiment with combinations. You really can’t go wrong with a homemade popsicle, can you?
